You will need
4 crust slices Warburtons WW White Danish
150g ripe tomatoes, such as baby plum tomatoes
1/2 clove garlic, very finely chopped
1/4 red onion, finely chopped
1 tsp extra virgin olive oil
Make it
| Serves 4
- Chop the tomatoes and place in a bowl with the garlic, onion, olive oil, pepper and most of the basil leaves. Stir and set aside
- Cut the crusts in half lengthways and lightly toast the outside (crust side) only
- Turn the crusts over and divide the tomato mixture between the bread slices, then top with the cheese
- Return to the grill and cook until the cheese is melting and the edges are golden brown. Scatter the rest of the basil over the top and serve with a little balsamic vinegar to dip in
