    4 crust slices Warburtons WW White Danish

    150g ripe tomatoes, such as baby plum tomatoes

    1/2 clove garlic, very finely chopped

    1/4 red onion, finely chopped

    1 tsp extra virgin olive oil

    1. Chop the tomatoes and place in a bowl with the garlic, onion, olive oil, pepper and most of the basil leaves. Stir and set aside
    2. Cut the crusts in half lengthways and lightly toast the outside (crust side) only
    3. Turn the crusts over and divide the tomato mixture between the bread slices, then top with the cheese
    4. Return to the grill and cook until the cheese is melting and the edges are golden brown. Scatter the rest of the basil over the top and serve with a little balsamic vinegar to dip in
