You will need
4 Warburtons Crumpets
1tsp light olive or vegetable oil
½ onion, sliced
10 cherry tomatoes, halved
10 chestnut mushrooms, halved or quartered
2-3 tbs tinned beans in water, rinsed (such as haricot, cannellini or borlotti beans)
2tbs water
few sprigs flat leaf parsley, chopped
Make it
10 minutes | Serves 2
- Heat the oil in a frying pan and add the onions, tomatoes and mushrooms. Fry for 3-4 minutes until golden then add the beans and turn down the heat. Cook until the beans are heated through, stirring frequently. Stir through the chopped parsley
- Meanwhile, toast the crumpets on both sides. Pile the vegetables on top of the crumpets and serve.
