You will need
2 Warburtons Potato Cakes
3 Slices of Streaky Bacon
Handful of sliced mushrooms (approx 30g)
1 small or 1/2 large vine tomato, cut into wedges
1 egg
Black Pepper
Make it
20 minutes | Serves 1
- Heat a small pan of water to almost simmering.
- Meanwhile, grill or fry the bacon until crispy. Grill or fry the mushrooms and tomatoes. Keep these all warm.
- When the water is ready, crack in the egg and poach for about 3 minutes or until the white is just set but the yolk is still runny.
- Meanwhile toast the potato cakes
- When everything is cooked place one potato cake onto a plate and top with the bacon and tomatoes.
- Add the other potato cake and top with the mushrooms and poached egg. Season with a good grind of black pepper and serve.
