    You will need

    2 Warburtons Potato Cakes

    3 Slices of Streaky Bacon

    Handful of sliced mushrooms (approx 30g)

    1 small or 1/2 large vine tomato, cut into wedges

    1 egg

    20 minutes | Serves 1

    1. Heat a small pan of water to almost simmering.
    2. Meanwhile, grill or fry the bacon until crispy. Grill or fry the mushrooms and tomatoes. Keep these all warm.
    3. When the water is ready, crack in the egg and poach for about 3 minutes or until the white is just set but the yolk is still runny.
    4. Meanwhile toast the potato cakes
    5. When everything is cooked place one potato cake onto a plate and top with the bacon and tomatoes.
    6. Add the other potato cake and top with the mushrooms and poached egg. Season with a good grind of black pepper and serve.
