2 Warburtons Crumpets
2 medium free-range eggs
100g smoked salmon
Freshly ground black pepper

- Toast the crumpets under the grill or in a toaster.
- Meanwhile, poach the eggs in gently simmering water for 3-4 minutes, or until done to your liking.
- Place the crumpets onto two warmed plates. Share the smoked salmon between them, then top each one with a poached egg.
- Serve sprinkled with black pepper.
