You will need
6 slices Warburtons Wholemeal loaf
2 tbs (heaped) low fat cream cheese
100g cucmber, thinly sliced
2 vine tomatoes, thinly sliced
Black pepper
1 avocado, de-stoned, peeled and thinly sliced
100g smoked salmon
Lemon wedges to serve
Make it
| Serves 2
1) Spread half the cream cheese over 2 slices of the bread then arrange the cucumber on top. Add the tomato slices and season with black pepper
2) Add a slice of plain bread to each then arrange the avocado on top. Add the smoked salmon and a little more black pepper
3) Spread the rest of the cream cheese over the two remaining slices of bread and place, cream cheese side down on top of the sandwich stacks
4) Cut into triangles and serve, adding a skewer or cocktail stick to secure if required!
