You will need
4 Warburtons Gluten Free White Rolls
2 large ripe tomatoes, diced
10 cherry tomatoes, quatered or diced
½ red onion, finely chopped
1 small clove garlic, thinly sliced
Sea salt and black pepper
2- 3tbs extra virgin olive oil
Handful fresh basil leaves
Make it
| Serves 4-8
- Put the tomatoes, onion and garlic into a bowl and season well with salt and pepper. Stir in the olive oil and set aside. You can make the topping a few hours ahead and keep it in the fridge if you like, but take it out half an hour before serving so the tomatoes aren’t cold when you top the toasts
- Toast the rolls under the grill or on the bbq then arrange on a platter or board
- Spoon the tomato mixture onto the toasted rolls and scatter over the basil leaves. Nice served with a little rocket to add on top too.
