    100g lean bacon, chopped

    2 garlic cloves, finely chopped

    4-6 thyme sprigs

    12 cherry tomatoes, halved

    1. On medium heat, sauté the garlic and bacon in a large non-stick pan for a few minutes.
    2. Add the mushrooms and stir-fry for 4-5 minutes, stirring occasionally.
    3. When the mushrooms have softened, remove from the heat and stir in the tomatoes and thyme leaves. Season with pepper. Meanwhile, toast the Warburtons Crumpets.
    4. Spoon the mushroom mixture on the crumpets and serve immediately, drizzling with any pan juices.
