You will need
4 Warburtons Crumpets
100g lean bacon, chopped
2 garlic cloves, finely chopped
4-6 thyme sprigs
12 cherry tomatoes, halved

- On medium heat, sauté the garlic and bacon in a large non-stick pan for a few minutes.
- Add the mushrooms and stir-fry for 4-5 minutes, stirring occasionally.
- When the mushrooms have softened, remove from the heat and stir in the tomatoes and thyme leaves. Season with pepper. Meanwhile, toast the Warburtons Crumpets.
- Spoon the mushroom mixture on the crumpets and serve immediately, drizzling with any pan juices.
