You will need
6 slices Warburtons Toastie loaf (or White Bloomer)
6 rashers streaky bacon, smoked or unsmoked
2 medium free-range eggs
½ tsp vanilla extract
100ml milk
1 tbs butter
1 tbs vegetable oil
Drizzle maple syrup, optional
Make it

1) Cook the bacon under the grill or in a frying pan and keep warm
2) Meanwhile beat the eggs with a fork in a wide shallow bowl then whisk in the vanilla extract and milk
3) Heat a little of the butter and a little of the oil in a large non-stick frying pan over a medium heat. Dip one of the bread slices in the egg mixture and turn to coat each side. Let the excess drip off then place in the pan then repeat with another one or two slices, depending on how many you can fit in your pan.
4) Fry gently for a few minutes until the bread is golden brown then turn and cook the other sides. Keep warm while you cook the rest of the slices
5) Stack the French toast onto warmed plates and top with the crispy bacon, then drizzle with a little maple syrup
