You will need
- 200g dry cure streaky bacon
- Maple syrup
- 2 Crumpets
- Whipped vanilla butter
- 200g softened butter
- 2 tbsp milk
- 1 tsp vanilla extract

- Grill the bacon until crispy, toast the crumpets
- To serve, simply top the crumpets with plenty of bacon, drizzle with maple syrup and top with vanilla butter
- Scrape the sides of the bowl, add the vanilla extract and beat on high for 2-3 additional minutes, until the butter is light and creamy
- Transfer to an airtight container and store in the refrigerator for up to a week. Return to room temperature before serving.
